Blazin' Short Rib Tacos With Roasted Peppers

Oh, it looks innocent enough,
BUT IT ISN'T!!! TRUST ME ON THIS!!!
DO NOT FEED THIS TO YOUR CHILDREN!!
THE HEAT FACTOR IS TOO HIGH!!!

It's HOT, it's SPICY,
it's so entirely different than any taco meat you've had!


Here's the recipe...printable recipe is at the end of the post.
What makes this so hot??? I have no idea!!
Blazin' Short Rib Tacos with Roasted Peppers

Ingredients
2 tablespoons grapeseed oil...Angie’s note: I used olive oil
4 (6-ounce) boneless short ribs
Salt and freshly cracked black pepper
1 onion, sliced
3 tablespoons minced garlic
2 chipotles, minced
1/2 cup hot salsa
1 quart beef stock
1 jar fire roasted whole red peppers, drained and patted dry
1 jar fire roasted whole yellow peppers, drained and patted dry
1/4 cup chopped cilantro leaves
4 to 6 flour tortillas
2 limes, cut in wedges, for garnish

Directions
Preheat the oven to 400 degrees F.

In a large Dutch oven over medium-high heat, add the oil. Season the short ribs with salt and pepper, to taste. Add short ribs to pan, 1 at a time, and sear on all sides until nicely browned. Remove them from the pan to a platter.


In the same Dutch oven, over medium-high heat, add the onions. Cook until the onions are well caramelized, about 2 to 3 minutes. Add the garlic and mix well. Stir in the chipotles, salsa, stock and salt and pepper, to taste. Bring to a boil, then add the short ribs and cover. Put the pot in the oven and braise the ribs until the meat is fork tender, about 1 1/2 to 2 hours.

Remove the ribs from the oven and shred the meat with 2 forks. Slice the peppers into thin strips and put them in a bowl along with the cilantro. Warm the tortillas in the oven. Assemble the fajitas with the desired amount of short rib meat and top with peppers.

Garnish with lime wedges and serve.

Now you can turn down the heat factor for kids maybe by using mild salsa for the HOT salsa and green chilis for the CHIPOTLE chilis instead.

I just googled chipotles and see that chipotles are actually dried jalapenos...NO WONDER!!!

Why do I turn into such a cavewoman when I make
beef ribs?

Seriously, this must stop. I AM civilized.
For the most part.
Except I always forget to send thank you notes.
But other than my thank you note failings, I'm mostly civilized.

So....
Chop up yer onions,
garlic
and
chipotle peppers.



Throw those nice onions into some olive oil and begin caramelizing...

Throw the chopped garlic in...

Now add the chipotle peppers, salsa and beef stock to the caramelized onions...

and
chipotle peppers.

Like a good cavewoman,

add the short ribs to the pot now.

Now cover the pot and put these short ribs in the oven for
1 1/2 to 2 hours to braise, until fork tender.

Heat up a tortilla and scoop some delicious short rib meat on there.

After slicing some roasted red peppers from
a jar,
put a few peppers on top of the meat.
I had roasted red peppers in my freezer, so that's what I used.
Cuz I am Martha Stewart bay-bay!!




Sprinkle on some chopped cilantro and
squeeze a bit of lime juice...




Get ready to have your mouth explode with smoky, hot, layered flavors of a Blazin' Hot Short Rib Taco with Roasted Red Peppers!!!

This taco meat is layered with the flavors of that
beef broth,
the salsa,
chipotle peppers,
garlic and those
yummy caramelized onions.


Oh this looks innocent but it is not like any other taco you've ever had...have the ice water ready!!!

this is one of Aaron McCargo's recipe.

Now I made these tacos about six weeks ago and when I showed Tim the pictures again just now on Sunday night, he got this far away look in his eyes and I swear his mouth started watering.

Oh gosh, here's the printable recipe...now if you are like my MOTHER who has an I-pad, you won't be able to see this printable recipe, cause it's an embedded document and for Pete's sake, let's not let a fancy I-pad open a taco recipe.
Ma, get a laptop or desktop too!
