Tortellini Vegetable Chowder
This was soooo easy!!

MAKES 8 SERVINGS
4 slices bacon, chopped
1 onion, chopped
1 rib celery, chopped
1 red bell pepper, chopped
2 cups fresh or frozen corn kernels
2 cups low sodium chicken broth
⅓ cup flour
3 cups 1% milk
⅓ cup chopped fresh basil (or 1 teaspoon dried)
¼ teaspoon salt
½ teaspoon pepper
hot sauce, to taste (optional)
8 ounces fresh or frozen cheese tortellini, cooked and drained
In a large saucepan, cook bacon over medium high heat for 1–2 minutes. Add the onion, celery and bell pepper. Cook for 5 minutes or until the vegetables are soft. Add the corn and broth. Bring to a boil over high heat. Reduce the heat to medium. Simmer for 15 minutes. In a separate bowl, gradually add milk to the flour, whisking until smooth. Pour into the vegetable mixture. Add the basil, salt, pepper and hot sauce. Cook, stirring occasionally, for 5 minutes, or until the soup thickens. Add the tortellini and serve.

This is the cheese tortellini I used...
So we'll start by chopping up the veggies.
Throw the veggies in there and sautee until they're soft, oh maybe 5-7 minutes.
Now throw the corn in there, doesn't matter if it's frozen...
Looks like a colorful soup so far...
After about 15 minutes, pour in the milk and flour mixture.
Then add in the fresh basil, salt and pepper and hot sauce.
So the soup will start thickening up rather quickly, just be sure to keep stirring it.
Lots of goodness in there.
Don't
forget to boil the tortellini.
Let it all simmer for a bit.
Ladle
some up in a bowl.

I've made this Tortellini Vegetable Chowder twice in two weeks and my quick notes are:
1. Recipe calls for 2 cups of corn. It's a LOT. Consider using less.
2. Recipe calls for 8 oz. tortellini. Use a bit more. I used 16 oz. That was probably a bit much, so next time Ima use 12 oz.
Okay, before closing, just a quick picture.
Our neighbor was holding church services a couple Sundays ago.
I saw all the horses and buggies coming down the road and grabbed my camera and screamed down to get a quick picture, covertly of course.
Of course I didn't do that.
Cause that would have been rude, right?

I would have helped with dishes.
Even though I have an inability to do

I have a disease.

It's called hatedoingdishes.itis.
The symptoms are:
frustration
weariness
desire to eat but not clean up
boredom
laziness
sighing
denial
blind to the obvious
hoo care attitude
Helping a loved one: If you know anybody who has this condition, the most supportive thing you can do is to
do their dishes.
Hatedoingdishes.itis is an untreatable condition.
The only thing I've found that has helped is
reward-based behavior modification.
Rewards = wine, cheesecake, chocolate, wine, cheesecake
