Tortellini Vegetable Chowder

Tortellini Vegetable Chowder

MAKES 8 SERVINGS
​
4 slices bacon, chopped
1 onion, chopped
1 rib celery, chopped
1 red bell pepper, chopped
2 cups fresh or frozen corn kernels
2 cups low sodium chicken broth
⅓ cup flour
3 cups 1% milk
⅓ cup chopped fresh basil (or 1 teaspoon dried)
¼ teaspoon salt
½ teaspoon pepper
hot sauce, to taste (optional)
8 ounces fresh or frozen cheese tortellini, cooked and drained

In a large saucepan, cook bacon over medium high heat for 1–2 minutes. Add the onion, celery and bell pepper. Cook for 5 minutes or until the vegetables are soft. Add the corn and broth. Bring to a boil over high heat. Reduce the heat to medium. Simmer for 15 minutes. In a separate bowl, gradually add milk to the flour, whisking until smooth. Pour into the vegetable mixture. Add the basil, salt, pepper and hot sauce. Cook, stirring occasionally, for 5 minutes, or until the soup thickens. Add the tortellini and serve.

This is the cheese tortellini I used...

Disclaimer: I actually used 2 packages of tortellini even though the recipe just calls for one.

we'll start by chopping up the veggies.

Next throw that luscious bacon into the pan and let it cook for a few minutes.




Throw the veggies in there and sautee until they're soft, oh maybe 5-7 minutes.



Now throw the corn in there, doesn't matter if it's frozen...

​Looks like a colorful soup so far...

Pour in the chicken broth and bring to a boil then let the soup simmer a bit.




After about 15 minutes, pour in the milk and flour mixture.

Then add in the fresh basil, salt and pepper and hot sauce.

the soup will start thickening up rather quickly, just be sure to keep stirring it.

Now throw the cooked cheese tortellini in the chowder.

Let it all simmer for a bit.

The salty bacon,
the cheesy tortellini, the red bell pepper, the hot sauce
in the creamy chowder....
super yummy!


This is a hearty soup!
Now get a spoonful and enjoy!

A couple notes here: 
I've made this Tortellini Vegetable Chowder twice in two weeks and my quick notes are:

1. Recipe calls for 2 cups of corn. It's a LOT.  Consider using less.

2. Recipe calls for 8 oz. tortellini. Use a bit more. I used 16 oz. That was probably a bit much, so next time Ima use 12 oz.



​Okay, before closing, just a quick picture.
Our neighbor was holding church services a couple Sundays ago.
I saw all the horses and buggies coming down the road and grabbed my camera and screamed down to get a quick picture, covertly of course.

All I wanted to do was pet all those horsies and then invite myself in after their service to eat all that delicious food I just know is served.

Of course I didn't do that.

Cause that would have been rude, right?

Would it?

I would have helped with dishes.

I have a disease.






I DO!!!!!


It's called hatedoingdishes.itis.




The symptoms are:
frustration 
weariness 
desire to eat but not clean up
boredom 
laziness 
sighing 
denial 
blind to the obvious
  hoo care attitude



Helping a loved one: If you know anybody who has this condition, the most supportive thing you can do is to
do their dishes.

Hatedoingdishes.itis is an untreatable condition.
The only thing I've found that has helped is
reward-based behavior modification. 
Rewards = wine, cheesecake, chocolate, wine, cheesecake
In that order.
