Cool Cars in the Drive and a Cool, Colorful Mexican Citrus Salad with Avocado in the Kitchen

Two separate cool customers stopped by the last couple weeks to show Tim their cool vintage cars...

And just like
Tim LOVES vintage muscle cars (as do I)...I also love this colorful Mexican Citrus Salad with Avocado.

But now I feel we must get back to this Mexican Citrus Salad with Avocado...this salad is WONDERFUL!!!!

Mexican Citrus Salad with Avocado
Straight outta www.midwestliving.com
Ingredients
  • 1/4 cup fresh lime juice
  • 1/4 cup fresh orange juice
  • 3 tablespoons vegetable oil
  • 1 tablespoon finely snipped flat-leaf Italian parsley
  • 1 tablespoon minced shallot
  • 1 tablespoon honey
  • Salt 
  • Ground black pepper
  • 1 cup bite-size strips peeled jicama
  • 1 medium grapefruit, peeled and sectioned*
  • 1 medium orange, peeled and sectioned*
  • 1/2 cup thinly sliced red onion
  • 1 avocado, halved, seeded and cut up
  • 3 cups torn Boston or bibb lettuce, torn into bite-sized pieces (3 cups)
  • 2 cups chopped romaine lettuce
  • 1/2 cup pumpkin seeds (pepitas), toasted 
  • 1/2 cup crumbled queso fresco, soft goat cheese (chevre) or feta cheese
Directions
  1. In a medium bowl, whisk together the lime and orange juice, oil, parsley, shallot and honey. Season with salt and pepper. Add the jicama, grapefruit, orange, red onion and avocado; toss gently to combine.
  2. Combine the Boston and romaine lettuce in a serving bowl or on a platter. Spoon the dressed ingredients over the lettuce. Top with pumpkin seeds and queso fresco.

This salad (even without the dressing) is citrusy and bright and delicious!

Bibb lettuce and Romaine and grapefruit and orange pieces. 

There's queso fresco cheese and avocado and 
red onion and of course jicama.
And amazing, 
just amazing dressing to go along with this vibrant salad.




We kept the salad dressing on the side.

This dressing is FABULOUS by the way!!!!!!!!

And don't forget to use Jicama (found in the produce section), looks like a round turnip with brown skin.

While whisking the ingredients to the salad dressing, you will keep repeating to yourself a line from Jerry McGuire. 
NO, 
NOT "Show me the money!" 

The other line....."You had me at hello."







Jicama is like a Mexican water Chestnut or apple....it is key to this lovely, light, refreshing salad! 
Provides crunch and an interesting textured flavor.

Okay, so in closing, it looks like Tim and Little Boy Blue 
are going fast in this go-kart but they are not. 
(I had used the zoom lens on my camera to capture the joy in grandson and grandpa's faces, capturing a a fun moment in time for both of them.)
I think our one and only grandchild is so darn adorable, 
I could eat him up in one bite!


That's probably why he spends so much more time with his Grandpa than with me, he doesn't want to get eaten all up.


He'd rather be pulling out 28 year old 4-wheelers from the garage with his Grandpa and seeing if they run after 
10 years in storage.

You would not believe it, but these pancakes are a PERFECT side dish with barbequed chicken or steak!

So speaking of yummy dishes made with corn...this Scalloped Corn Casserole
continues to be a favorite dish as well!

There's something special about this corn casserole.
I think it's the French onion dip.
This dish works well in small gatherings as well as big gatherings like
family reunions.
Here's the recipe for this super easy, yummy
Scalloped Corn Casserole.
People will ALWAYS request the recipe...I kid you not.
So here it is.......AGAIN! :)
Scalloped Corn Casserole
1 can Whole Kernel Corn, undrained
1 can Cream Style corn
1 box Jiffy Corn Muffin Mix
1 - 8 oz. container French Onion dip
1/2 stick butter, melted

Mix all together. Pour in baking dish.

Bake uncovered 1 hour at 350 degrees.
YUM!

only they're a side dish!!

Try these savory corn-and-basil pancakes as a side dish with barbecued chicken or grilled steak.
Yields: 5 servings, 2 cakes each

Ingredients
  • 1/2 cup(s) white whole-wheat flour (see Note) or all-purpose flour
  • 1/2 cup(s) low-fat milk
  • 2 large eggs
  • 2 tablespoon(s) canola oil, divided
  • 1/2 teaspoon(s) baking powder
  • 1/2 teaspoon(s) salt
  • 1/4 teaspoon(s) freshly ground pepper
  • 2 cup(s) fresh corn kernels (about 2 large ears; see Tip) or frozen
  • 1/2 cup(s) chopped fresh basil
Directions
  1. Whisk flour, milk, eggs, 1 tablespoon oil, baking powder, salt, and pepper in a medium bowl until smooth. Stir in corn and basil.
  2. Brush a large nonstick skillet lightly with some of the remaining 1 tablespoon oil; heat over medium heat until hot (but not smoking). Cook 4 cakes at a time, using about 1/4 cup batter for each, making them about 3 inches wide. Cook until the edges are dry, about 2 minutes. Flip and cook until golden brown on the other side, 1 to 3 minutes more. Repeat with the remaining oil and batter, making 10 cakes total. Reduce the heat as necessary to prevent burning.

Okay, so here's the fixins for this yummy
Corn & Basil Pancake recipe.

And here's the WHITE WHOLE WHEAT FLOUR used in this recipe...apparently this is every bit as nutritious as regular
WHOLE WHEAT FLOUR!

Okay,

we start by removing the kernels off the cob.




Easy peasy pancake batter here...
just whisk the flour, milk, eggs, oil, baking powder, and salt and pepper.

Stir in the corn...

...and now the basil.



I used my new YIPPEE KI YAY non stick skillet!!
I Love Cuisinart products! I just can't afford a lot of them unless they're on YIPPEE KI YAY sale!!!
Anyway, oil up that yee haw pan and heat on medium!



Okay, scoop-a-loo some of the batter into the pan, four cakes at a time.

And because the recipe said to make the cakes 3 inches wide,

I took that literally.

I measured these THREE TIMES!!!   Who does that??

Anyhoo,

flip these tasty babies over and cook for a few more minutes.

Remove these from the skillet and cook up the rest.

Now, I halved the recipe, and it made these four nice size cakes.



These savory cakes go great with barbeque,
so I cooked up these pepper and pineapple stuffed pork chops from the grocery. I used a nice rub on the chops. After cooking, I drizzled warm, sweet barbeque sauce over them.



I just knew these tasty Corn & Basil Cakes would be a complimentary side dish with those pork chops!

at the yummy corn in there and the flecks of basil. The pepper added just the right amount of oomph.

I plated these two things up but clearly I chose to try out that cake before the proper picture was taken.

And it was delicious.

I would not hesitate making these for breakfast with some brown sugar covered bacon. Mmmmmmm.




The sweetness of the colored peppers, pineapple and barbeque sauce was magic with the texture and flavor of the pancake.

These cakes are seriously one of the best, most unexpected things I've ever eaten.

Don't look for a massive flavor punch in the cakes, it's more subtle.
Your first bite will be "oh they're okay" but then you find yourself not being able to stop.

Sometimes, Tim's actually amused. Heeeee.

A Day In The Life Of A Fish Taco Dinner

We had a Fish Taco Dinner Saturday night.  
I will post the "non-boring" (cough, cough, gag) photos, directions and recipe next post, eh?

Well, we had a few visitors for dinner,
including Little Boy Blue,
who came over with his Momma and Daddy and stayed overnight.

As soon as that ca-ute little family rolled into the driveway, I whisked Little Boy Blue out to the shop to go say "Hi" to Grandpa....

I'm a hard worker, but I've been having to work especially hard every day doing this.....

That's me all right; that little monkey just a workin' away.

In fact Sweetness asked me today on my lunch what'd I'd been up to.
I replied, "Having my butt hang out of car trunks and doors. If there's a hinge, there's my butt hanging out of it." 
I think she was horrified at first.
But then laughed uncontrollably.
Oh real funny Sweetness, real funny.



So anyway I set the table for this fish taco dinner.
And you know how I loves me the table settings and centerpieces and table decor and tablescapes and dishes and glasses and don't EVEN GET ME STARTED!

So I thought these nice chunky colorful pieces would make a nice centerpiece with chunky candles deposited in them.
All of these pieces were Tim's super cool,
classy Grandmother Marguerite's glassware...man, she loved to set a table and boy could she!!!




I added Marguerite's colorful water glasses to the table settings...

And then I added plates and cloth napkins...keepin' it casual though, after all, this is fish tacos we're talkiin' about here...

So while I was finishing up the fish tacos,

Great Grandma finished up feeding Little Boy Blue,
 
although LBB pretty much wanted to run the show on this one.

The next morning, we were still stuffed and Little Boy Blue was in a fantastic mood.



So I put him out in his fun walker-gizmo-thinga-ma-job outside for a change of pace.






And I asked Tim to watch him while I cleaned up dishes from the night before...

Gone Out Of Town To Buy A Car And Drool Over Christmas Ornaments

Oh!

The luscious Cole Slaw, Cheeseburger and Fried Zucchini will have to wait for this weekend.

Went out of town spur of the moment this week to buy a hot looking Impala SS.

Initially was not too thrilled about driving three hours one way but lookey-look what Angie discovered was located just a couple miles away from the dealership where we were supposed to go to...
Notice I said SUPPOSED to go to...

According to the Peoria website, Kightlinger's Antiques is filled with 80 trees and 65,000 Christmas decorations.
They are an antiques, home decor, furniture re-purposing and lamp shop as well.
I looove this sock monkey tree below!

I was so looking forward to visiting that shop,

and never leaving for like 8 million days.

But

we didn't go there.

Instead we picked up a hot Impala SS in a town much closer; there was antiquing and cute shops but certainly not 65,000 ornaments on 80 thousand trees.

It's for the best anyway, because I picked up these adorable vintage Christmas candle rings there. Love them. LOVE!

OHHHHH!! Before I get into the Odd Assortment Of Eccentricities We Find In Trade-In cars

I would like to share that this nice 2000 Buick Century Custom with 147k miles, never made it to the top of our "Current Inventory" page here on this website.

The reason why this car was never featured as "Current Inventory" is because this car was looked at and pre-sold a day after we received it, to the nicest, warmest, happiest, most engaging family you would ever want to meet. It was also sold at a very affordable price.

We waited on title to come in, then ran this super nice Century Custom through service and detail and finally completed the paperwork sale just tonight. Our customers were so patient and thoughtful as we went through the exact process we take with every vehicle.

Many of our vehicles pre-sell this way.

Yeah, so last night I dug through the day's worth of trash (literally)...(don't ask)...(remember I have no shame)....(or class). This assortment was pulled out of a couple vehicles earlier in the day. Not bad. Love the "no smoking" sticker :) See that change? Don't even think about it. It's mine!
Hmmmmm, Ever wonder what I find when I have my 47 year old bum hanging out of the trunk trying to vacuum that one teeny, tiny, teensy piece of sumpin' sumpin' from the deepest, darkest right hand corner of that trunk?

OH MY GOSH!!!

Tim comes out to the shop last night (at 10pm) and sees me with half my bum sticking out of  the sanitation company's garbage bin (boy, he's one LUCKY guy, isn't he)? He asks what I'm doing.

I tell him; I'm looking for the stuff out of today's vehicles that were detailed.

HahaFunny-Jokester Tim goes over to his desk,

pulls off this musical Hawkeye pen hanging on the wall and pushes the button on top.
Of course the Iowa fight song plays
with a resounding "Go Hawks!" at the end.
Tim says, "Hey, tell them you find this in every vehicle."

I stare at Tim.

I tell him he's full of it, and he just wanted to bring the Hawkeyes up into this topic somehow.

He agrees and hangs his pen back up on the wall.

Hey, that's boring, certainly the next three are more interesting:

Well, at least the next three were funner.


I kid you not

We had a super hot.hot.hot 2004 Grand Prix GT with 110k miles delivered just last night at 9:30pm.
I was taking pictures for this post at 10pm.
I told Tim, hey, let's open up the trunk of this newly delivered Grand Prix and I will take a picture of whatever is in that trunk point-blank,
without touching a thing.
As long as there's not a dead body in there, I'm showing whatever is in there, no matter how gross.

I'm armed with my crappy, cheap camera.


Tim slowly opens up the trunk.

I adjust my eyes to the darkness (it is 10pm after all).
I snap the picture.




Guess what's in there.

Top Five Things heard On The Lot:
1. Where do you get all your cars?
Answer: Most of our vehicles are dealer trades from a few specific dealers. We only buy cars in good mechanical condition. Each car is thoroughly inspected and goes through our service and detail. Many of our cars presell before making it to our car lot. Be sure to keep checking our website or stop out or give us a call if you have any questions about any of our vehicles.

2.  Is the car as nice as it looks?
Answer: Yes. All our vehicles are thoroughly inspected, serviced and detailed and are completely ready-to-go.

3. It seems like you move your cars quickly.
Response: We are blessed to have many repeat customers in and out of the community. We've had many families buy multiple cars from us, the most to date being seven cars (Thank you Mr. Johnson :).  Referrals are a large part of our business and factors into our inventory moving quickly as well.

4. You have your cars priced right.
Response: It comes down to low overhead, an advantage of living and working in Frytown, IA.  We ARE the largest volume mover of cars in Frytown after all. *giggle*

5. It's so peaceful out here.
Response: Yup, we love it.

Did It Get All Dark And Stormy Last Night Where You Are? Did You Run For Cover Like A Sane Person? Or Did You Stand Outside And Take Pictures?
Angie's Go-To Marinara Recipe
This marinara recipe is from Bartolino's restaurant in St. Louis and was featured in the March/April 2005 Midwest Living magazine. This recipe has a kick to it. I make this marinara and serve it with toasted ravioli. I also make it for pasta when I am time-limited and starved.

Marinara Sauce
1/2 cup chopped onion
2 cloves garlic, minced
1 Tbsp. olive oil
1 28 oz. can tomatoes, cut up
1/4 cup dry red wine (optional)
1/4 tsp. salt
1/8 tsp. cayenne pepper
1/8 tsp. black pepper
1/4 cup snipped fresh basil
2 tsps. sugar

1. In a medium saucepan, cook onion and garlic in hot oil over medium heat until tender. Stir in undrained tomatoes, wine (if you like), salt, cayenne pepper and black pepper.
2. Bring to a boiling, reduce heat. Simmer, uncovered 25 to 30 minutes or until desired consistency, stirring occasionally. Stir in basil and sugar. Cover; cook 5 minutes more. Makes 2 1/2 cups (4 to 6 servings).

Okay, so these pictures don't do justice to the tastiness of this marinara, especially with that big old piece of bread slapped on the plate. I always use whole wheat pasta and usually grate some fresh mozzarella on top. At times, I will side this dish with sauteed kale and garlic instead of the asparagus. Please remember, this is not a sweet sauce and it does have a bite to it. Yowza!
